"Black Truffle-Scented Young Duck Royale with Salmis Sauce"
The signature menu item of Tour d'Argent, "Young Duck Royale with Salmis Sauce," features young duck royale dressed in a deeply flavorful salmis sauce, generously adorned with fragrant black truffles. This dish, where tradition and innovation coexist, presents a harmonious blend of the rich depth of the salmis sauce and the elegant aroma of black truffles.

"Golden Black Truffle and Celeriac Soufflé 'Imperial Egg'"
This dish combines black truffle, gently cooked celeriac confit, and smooth sea bream mousse wrapped in gold leaf, prepared as a soufflé. At its center sits a creation inspired by the "Imperial Egg," the luxurious Easter eggs said to have been crafted by goldsmith Peter Carl Fabergé for the Russian Imperial Romanov family, resembling a "golden egg." Guests can enjoy it with two types of sauces: a rich and aromatic black truffle sauce and a white wine sauce with moderate acidity.

A Story Woven Like a Fairy Tale: The History of Tour d'Argent

Approximately 400 years ago, an inn on Île Saint-Louis along the Seine River, the heart of Paris, was named "Tour d'Argent," meaning "Silver Tower," after the Tournelle Castle that could be seen from its location, decorated with silvery shimmering mica. Eventually, it became a temple of gastronomy frequented by King Henry III and many royal aristocrats, establishing its place in French culinary history. "Tour d'Argent Tokyo" is the only branch in the world where this long history and tradition live on, having opened at Hotel New Otani (Tokyo) in 1984.
