Piacere, the Italian restaurant on the 28th floor of Shangri-La Tokyo, is introducing a new spring dinner course called "Haru" from March 3, 2026. Taking inspiration from kaiseki—the Japanese multi-course tradition celebrated for its seasonal ingredients and decorative presentation—the course showcases an array of dishes built around handpicked spring produce.
The evening opens with an amuse-bouche of house-made olive financiers, cheese pie, and a flan of foie gras and porcini mushrooms. The first appetizer channels the chef's childhood memories of his mother's cooking: a vibrant plate of hime (princess) carrots with mandarin purée, dotted with aori squid tartare, drawing the colors and freshness of spring. White asparagus follows, paired with Hayama eggs and Miyazaki caviar, with hollandaise sauce completed tableside before the dish is presented.
The ravioli course features blue lobster, served with a lemon-scented consommé and wood sprouts. For the fish course, trout is smoked over magnolia leaf to a gentle medium finish, accompanied by walnut dressing and rapeseed flowers. The main course brings Hokkaido lamb on the bone, braised slowly with turnip and tomato; the rich tomato sauce pairs with focaccia and a potato purée topped with black truffle. The dessert is a strawberry mousse delicately garnished with Kamakura white chocolate and pistachio, served alongside cherry blossom ice cream. The meal winds down with a house-made strawberry tea, finishing the course on a warm and fragrant note.
