Shinagawa Prince Hotel's "Nippon Umai-mono Fair" Brings Regional Japanese Cuisine to Five Restaurants for Spring-Summer 2026

Shinagawa Prince Hotel (located in Takanawa, Minato-ku, Tokyo) will hold the "Shippu Gourmet Travelogue – NIPPON Umai-mono Fair" (品プリグルメ紀行~NIPPONうまいものフェア~) at five of its in-hotel restaurants from April 16 (Thursday) through July 15 (Wednesday), 2026. The event places the spotlight on Japan's regional food culture and the stories behind local producers.

The opening of Fukuoka Prince Hotel Momochihama in March 2026 further expanded the Prince Hotel network across Japan. Building on that milestone, this fair brings together the flavors, traditions, and ingredients from regions around the country, presenting them as a culinary journey through Japan.

Each participating restaurant offers two styles of menus: "Local Menus" featuring time-honored regional recipes beloved in their home areas, and "Arrangement Menus" where hotel chefs reinterpret local ingredients with their own techniques. Now in its second year, the fair follows a well-received debut in 2025.

The Arrangement Menu centers on ingredients from Aichi Prefecture. Kinso chicken — a rare breed raised in Aichi known for its rich umami — is prepared using low-temperature cooking to achieve a moist texture. Hatcho miso from Okazaki City is used as a hidden seasoning in both dishes.

Highlights include yakitori made with Tokyo Shamo chicken, a thin-sliced sashimi course dressed with Asahi ponzu jelly from Osaka, and a side-by-side comparison of Tokyo beef prosciutto and Kobe beef prosciutto. Tokyo Bettara pickles with cream cheese rounds out the savory offerings, with zunda mochi from Miyagi available as a sweet finish.

A rich shortcake is prepared using generous amounts of Shizuoka melon. The sponge is soaked in lime and mint syrup, then layered with chantilly cream and custard cream. The melon's fragrant aroma and refined sweetness fill each bite.
