Kichijoji Milk Cafe "Shiro no Mono" Launches New "-7°C Milk" Ice Cream

Starting May 25, 2026 (Monday), "Shiro no Mono" (シロノモノ), a milk specialty cafe in Kichijoji, will begin serving a new ice cream called "-7°C Milk" — a creation that uses temperature as the key to drawing out the natural aroma of fresh milk.

The Secret Is Temperature

Rather than adding ingredients or altering the recipe, the focus at "Shiro no Mono" was placed on serving temperature. At -7°C — slightly warmer than conventional ice cream — the ice crystals soften and melt smoothly on the tongue, while the trapped aroma of milk is released as a gentle fragrance. The result is an experience that engages not just taste but the sense of smell as well.

The ingredient list is kept minimal: raw milk and sugar only. After repeated testing and refinement, -7°C was identified as the temperature at which milk ice cream tastes and smells its best. (Note: -7°C refers to the product temperature at the time it is served to customers.)

Before its launch at "Shiro no Mono," "-7°C Milk" was test-sold at "OHAYO GROUNDS" in Okayama City during summer 2025. Customers who tried it shared reactions such as:
