From January 28 to February 2, 2026, authentic Spanish restaurant SPANISH DINING Rico will open a limited-time pop-up at the GINZA Stage on the second basement floor of Ginza Mitsukoshi Main Building as part of the "Spring Premonition" event.

Ginza Mitsukoshi Limited Edition Menu and Popular Desserts
The event features an exclusive menu item created specifically for Ginza Mitsukoshi: "Etajima Oyster Confit and Colorful Vegetable Paella." The oysters used are carefully cultivated in the calm waters near Etajima, Hiroshima Prefecture, known for their rich umami and sweetness that intensifies with each bite. To maximize their appeal, the oysters are slowly cooked at low temperature in olive oil, creating a confit that concentrates their flavor. This limited-edition paella showcases the luxurious taste of the sea's bounty combined with colorful vegetables.
Other offerings include a premium paella featuring five types of seafood—crab, shrimp, scallops, clams, and mussels—and "Fricandó," a dish of Kumamoto Prefecture Akaushi beef slowly braised for eight hours in red wine and sherry. Popular desserts include Rico's signature "Basque Cheesecake" and "Chocolate Basque Cheesecake," made with rich, smooth cream cheese that has minimal acidity. Enjoy these authentic Spanish dishes made with premium Japanese ingredients in the comfort of your home.

The oysters from the waters near Etajima, Hiroshima, are characterized by their rich umami and sweetness that spreads with each bite. This exceptional taste is called "Amami" (heavenly taste, a gift from above). The calm tidal currents around Etajima allow plankton to remain in the area longer, enabling the oysters to absorb abundant nutrients and grow large. These carefully cultivated oysters, subjected to strict quality control before shipment, represent the dedication of everyone involved in their production.
