Sillage Chef Kazuki Munesada

The restaurant's name, Sillage, is a French word meaning "the lingering scent" or "the trace left behind after someone passes." The concept embodies how, even after a dish disappears, its aroma, flavor, and the memory of that evening can resurface unexpectedly in moments to come. Sillage presents a contemporary bistronomy experience that combines French culinary techniques with Japanese fermentation culture and seasonal sensibilities.

Sillage Chef: Kazuki Munesada

Born and raised in Okayama, Chef Munesada began his career at The Westin Hotel Awaji after graduating from culinary school. He honed his classical French skills at Kobe Kitano Hotel before moving to Nîmes in southern France, where he trained under MOF (Meilleur Ouvrier de France) Chef Jérôme Nutile at his Michelin one-star restaurant, mastering cutting-edge techniques that emphasize ingredients while creating modern, refined dishes. Upon returning to Japan, he gained gastronomy experience at L'ARGENT in Tokyo (Michelin one-star). He approaches cooking with dedication, pouring his heart into every aspect from ingredient selection to final plating.
