Neo Classic
The Christmas-only dinner courses from SANGU, where the traditions and skills of Chinese cuisine live on, use carefully selected ingredients including braised whole shark fin from Kesennuma, Miyagi Prefecture, Ise lobster, Japanese black beef, and foie gras. Each dish skillfully incorporates the essence of French and Western cooking.
Based on the Cantonese cooking techniques handed down since the restaurant's founding, the courses combine Western sensibilities such as the aroma of truffles and berries and pie-wrapped baking. The result is a gourmet experience woven from tradition and innovation that is available only in this season.
Shark Fin from Kesennuma, Miyagi Prefecture

All of SANGU's Christmas courses feature shark fin from blue sharks (yoshikiri-zame) from Kesennuma, Miyagi Prefecture.
Raised by the bounty of the rich Sanriku sea, Kesennuma shark fin is finished one piece at a time by skilled artisans. The skin and bones are carefully removed, and the fin is dried slowly at a low temperature so as not to lose its nutrition and umami. It is then rehydrated with care over time and simmered gently in the superior broth, the cornerstone of Chinese cuisine handed down since the restaurant's founding, which brings out the shark fin's delicate texture and rich umami.
In the Christmas courses, a different part of the blue shark's fin, each with its own appeal, is prepared for each plan.

Pectoral fin: rich umami and a soft texture (course: Noel, from ¥17,000)

Dorsal fin: moderately fibrous with a deep, nourishing flavor (course: Carol, from ¥22,000)

Tail fin: a thick, substantial texture and concentrated umami (course: Wish, from ¥27,000)
Guests can enjoy the shark fin from Kesennuma, each part with its own appeal, according to the plan they choose.
SANGU's Christmas plans come with an admission ticket to the Floating Garden Observatory (Kuchu Teien Observatory). After the meal, guests can take in Osaka's night view from the observatory and linger in the afterglow of Christmas.
