Available from 11:00 AM to 4:00 PM, the sweets set pairs artisan wagashi with carefully selected teas, all rooted in Ishikawa's local agricultural produce.
Five Years of Seasonal Collaboration Between Farmers and Confectioners
The "Yell Oenka" series launched in October 2020 as part of the "Nouka Project" — a collaboration between Ishikawa Prefecture farmers and wagashi artisans dedicated to creating seasonal confections from locally grown ingredients. Over five years, the project has steadily introduced new creations with each season, supported by a loyal local customer base.

Strawberry Jam An-Butter Busse
(Oyashiromachi Tsubaya, Kanazawa × Kaga Fruits Land / Sankyo Farm strawberries)
This indulgent treat features jam made from "Kaorino" strawberries — known for their particularly fragrant aroma — from Kaga Fruits Land, combined with Tsubaya's anko (sweet red bean paste) and butter. Despite its generous portion size, it goes down surprisingly easily.

Noto Blueberry Yokan Dorayaki
(Kawada Futaba, Komatsu × Hirami Yuki Farm Noto blueberries)
Rich, full-flavored Noto blueberries are made into a yokan (sweet jellied confection) using house-made anko from Kawada Futaba, then sandwiched in a dorayaki pancake. The combination of fragrant pancake and dense yokan filling makes for a highly satisfying bite.

Jyonamagashi "Toki ga Mau Noto" (Crested Ibis Dancing Over Noto)
(Okashidokoro Sakichian, Hakui × Kiyoshi Farm Kanazawa yuzu)
Inspired by the planned release of crested ibis (toki) in Noto's Hakui City in late May 2026 — the first such release on Honshu — this jyonamagashi (fresh wagashi) captures the soft pink hue of the bird's wings. The filling is packed with fragrant Kanazawa yuzu, offering a refreshing citrus flavor.

Rice Flour Tricolor Hanami Dango
(Okashidokoro Marunishi, Komatsu × Hokushin Nosan / Inaho-sha rice flour)
Made with rice flour from Inaho-sha (Hokushin Nosan) in former Tsurugimachi, Hakusan City, these flower-viewing dumplings change with the season: through the end of April they evoke cherry blossoms, then transition to iris and wisteria themes from May onward.

Herb Farm Pezant grows lemon verbena, lemon balm, and chamomile without pesticides or chemical fertilizers at their own farm in Tsubata-machi. Their original blend, developed to pair with the Yell Oenka sweets, offers an apple-like sweetness with a refreshing lemon herb finish.

Kaga Bocha "Kaga Kaori" / Matcha "Ayamori no Shiro"
(Amano Chaten, Higashiyama, Kanazawa)
Amano Chaten, a long-established tea shop with over 400 years of history, offers "Kaga Kaori" — a fragrant roasted stem tea steeped in tradition — alongside the carefully selected matcha "Ayamori no Shiro."
