The CHOYA Ginza BAR, a plum wine cocktail specialty bar operated by CHOYA Umeshu Co., Ltd., is introducing a limited-time wagashi (Japanese traditional sweet) dessert from October 6 (Monday) to December 17 (Wednesday), 2025. The new offering, called "Umemomo no Yokan Hoshizora to Tsukiakari" (Plum and Peach Yokan: Starry Sky and Moonlight), represents the bar's first venture into wagashi creation.
Autumn Night Sky Inspiration
The dessert draws inspiration from autumn's celestial beauty, combining imagery of starry nights—represented by the Orion and Taurus meteor showers—with the full moon celebrated during traditional moon-viewing events. The dish captures the fleeting beauty and contrast of autumn nights, where the moon's brilliance can dim the stars' sparkle.
The Dessert Components
The starry sky yokan features multiple carefully crafted layers. The base combines Nanko plums with white bean paste, white peach, and Earl Grey tea, topped with a night sky layer made from butterfly pea and agar, finished with scattered gold leaf. Accompanying the yokan is a single candied fully-ripened Nanko plum, representing the full moon. This plum is hand-picked and carefully simmered with honey and sugar to preserve the skin, then soaked overnight in plum syrup.
The dessert offers a unique textural experience with its distinctly different layers, complemented by the harmonious balance of sweet and tart flavors in the candied plum.

Each serving comes with three varieties of specially crafted plum syrup to enhance the tasting experience:
- Plum Milk: A smooth syrup with refreshing acidity, made from Kishu Nanko plums and milk beverage
- Supreme Plum: A rich, aromatic premium syrup made from 100% fully-ripened Kishu Nanko plums
- Plum Strawberry: A concentrated syrup blending plums with strawberries for a complementary flavor profile
