Starting in the culinary world at a young age, Ako. trained at a kappo (Japanese fine dining) restaurant, a sushi restaurant, and a Michelin-starred hotel before going independent. Currently based on Awaji Island — where Ako. is also involved in fishing and fish wholesale — the chef offers morning dining and on-site private dining. Courses are composed based on the fish caught that day, the season, and the atmosphere of the occasion, bringing each day's catch directly to the plate.
