Restaurant & Bar "Hotaru & Bar"

Hotaru & Bar, the restaurant and bar that defines BOUNCEE by RIHGA Fukuoka Hakata, stands out even from the street corner outside. The menu draws on Hakata specialties and local ingredients, paired with kokushu* — sake, honkaku shochu, awamori, and hon-mirin from Kyushu's many breweries and distilleries.

The restaurant is run by O.B.U Company, which also operates the well-known local restaurant Hakata Hotaru, while the cocktail lineup was developed and curated by Takayuki Furusawa, master bartender at RIHGA Royal Hotels.

Hotaru & Bar accompanies guests from early evening into the late hours, whether for a quick drink or a full dinner, and also serves breakfast and lunch.

*Kokushu, meaning "Japan's representative alcohol," is a collective term for sake, honkaku shochu, awamori, and hon-mirin — drinks that have each been brewed for generations to match their local climate.

Dinner & Bar Time: The "Signature Pairing"

The menu features local dishes worth trying in Hakata, including goma-saba (sesame mackerel), motsunabe (offal hot pot), and mizutaki (chicken hot pot), alongside Hakata Hotaru's signature clay-pot rice and seafood delivered straight from Nagahama Fish Market — a showcase of Kyushu's bounty and Hakata's food culture. The drink lineup features a range of shochu and sake selected from Kyushu breweries, alongside original kokushu cocktails devised by the RIHGA Royal Hotels bartenders as a "signature pairing" with the food.

*Bar time begins at 10:00 PM. Guests using the bar must be 18 or older.
