The afternoon tea series "Palette of Seasons" draws inspiration from seasonal colors throughout the year. This final installment of the series features strawberries as the star. This special afternoon tea is available only during the season when strawberries reach their peak flavor.
Each dish expresses the essence of sweet-tart strawberries as Hokkaido transitions from winter to spring. The experience includes not only sweets but also creative savory items featuring Hokkaido ingredients and a live dessert performance finished right before your eyes.

The lineup combines the freshness of strawberries with the smoothness of Hokkaido milk.
Above a mousse where white chocolate's gentle sweetness blends with strawberry tartness sits an adorable Kumachan bavarian cream. Guests can enjoy various expressions of strawberries through items like terrine showcasing Hokkaido cheese richness, fragrant tartlets, and light millefeuille.
The panna cotta made with Hokkaido milk features spherification with strawberry sauce inside that bursts in your mouth, adding a textural accent.

The savory selections pursue unexpected harmony with strawberries.
Dishes include a plate combining strawberries with Hokkaido scallops and walnuts, and strawberry fritters with coconut and salami accents. The taste contrasts create memorable impressions.
The offerings also include croquant using Hokkaido rice "Fukkurinko", crispy chips of burdock seasoned with five-spice powder paired with pond smelt, and crispy sandwiches with herb-scented smoked salmon and potato—dishes that showcase the bounty of the land.
Freshly Baked Scones and Live Dessert with the Pâtissier
The scones, handmade one by one by the pâtissier, are popular items available for takeout. This afternoon tea features two varieties: classic plain and special strawberry.
For the live dessert, guests can select their preferred strawberries, and the pâtissier will finish them into "Crêpe Brûlée". The balance between the caramelized surface and smooth texture creates a special moment.
