About the Ingredients
Kasama Chestnuts

Ibaraki Prefecture is Japan's leading chestnut-producing region, ranking first nationwide in both cultivated area and harvest volume. Kasama City in particular has the largest cultivated area and the most farming operations in Japan, where the climate and volcanic ash soil with excellent water retention and air permeability grow flavorful, fragrant chestnuts. Helped by these climate and soil conditions, a wide range of varieties is grown, said to number more than a dozen.
Okukuji Eggs

A branded egg produced and sold by Hitachi Farm (ひたち農園) in Hitachiomiya, Ibaraki, known for its rich body and deep umami. Along with its quality, it is valued for its full-bodied yolks and firm whites. Thanks to its excellent taste, it has been chosen by well-known establishments such as top sushi restaurants and sweets shops in Tokyo.
Kogyoku (紅玉)

An apple in season from early October to early November, characterized by its bright red skin and sweet-tart flavor. Its flesh is firm and its flavor holds up well when heated, making it well suited to sweets such as tarts and compotes.
