Starting January 10, 2026, guests can enjoy creative, home-style casual Italian cuisine centered around grill dishes using local ingredients and chef-selected premium products.

The chef particularly focused on cheeses from Shiranuka Rakkei-sha (Cheese Workshop Shiranuka Rakkei-sha) in Shiranuka Town, Hokkaido. This workshop produces cheese using milk from cows raised in Hokkaido's rich natural environment, crafting each piece with meticulous handwork. While faithfully following authentic Italian methods, they pursue flavors that Japanese palates find delicious. Their cheese embodies deep passion in its aroma, texture, and lingering aftertaste.

One dish that simply showcases the marriage of Shiranuka Rakkei-sha's ricotta cheese with several vegetables, including local produce, is "Cucumber and Shiranuka Rakkei-sha Ricotta Salata Cheese." Enjoy it with the chef's original dressing. "Telenello Silarica Cheese and Anchovy Frico" features a warm, comforting recipe using potatoes, beloved in Italian homes. "Burdock Root Hummus with Cassis Agrodolce" uses unusual burdock in the hummus, offering a distinctly Japanese aroma. Adding the cassis sauce provides acidity and creates a more vibrant flavor.
