Dominique Bouchet Tokyo, the Michelin-starred French restaurant in Ginza, will host a special makers' dinner on July 17 and 18, 2026, centered on Domaine Simon Bize — one of Burgundy's most acclaimed producers. About Chisa Bize

Chisa Bize leads Domaine Simon Bize, one of Burgundy's most distinguished estates. Originally from Japan and formerly working in banking, she moved to Burgundy after marrying Patrick Bize in 1998. She spent years working closely alongside the vineyards, developing a deep expertise in winemaking. After Patrick's sudden passing in 2013, she took over the leadership of the domaine, carrying forward his vision with her own thoughtful approach. In 2008, at her initiative, the domaine transitioned to biodynamic farming — a philosophy of working with nature that has helped preserve and further refine Simon Bize's hallmark style of elegance and precision.
