Wines of the Evening

The all-rosé pairing features four wines from Château La Coste, each offering a different balance of acidity, fruit, aroma, and finish to complement the progression of the courses.

La Bulle Rosé NV

A sparkling rosé with delicate bubbles and a fresh, floral character. Its generous fruit complements the sweetness of the onions in the pissaladière, while its lively effervescence brightens the start of the meal alongside the vegetable pistou soup.

Lisa Rosé NV

Offering aromas of peach and citrus with soft, lingering acidity, this rosé pairs with the straw-smoked bonito and salade niçoise. The wine ties together the umami of the bonito, the richness of the tapenade, and the gentle sweetness of the accompanying vegetables.

Lady A Rosé 2023

With its citrusy freshness reminiscent of lime and nuances of white peach and raspberry, this rosé accompanies the white fish papillote Provençal. Its extended acidity lifts the delicate flavor of the fish while harmonizing elegantly with the thyme and bay leaf aromas released during the en papillote preparation.

Rosé d'une Nuit 2024

Featuring pink grapefruit freshness alongside soft strawberry and cherry fruit, this rosé is paired with the petits farcis main course. It holds up to the richness of the pork and beef filling while complementing the herbes de Provence and the sweetness of the Manganji pepper and tomato.
