Hachikian Marutamachi, a long-established chicken cuisine restaurant in Kyoto's Sakyo Ward, is launching spring limited menus from March 1. The seasonal menus make the most of Kyoto Red Chicken and Kyoto Duck, combining them with spring vegetables and mountain vegetables such as bamboo shoots, rape blossoms, and kinome (young sansho leaves) in the delicate style of Kyoto cuisine.

The kaiseki course highlights the rich umami of Kyoto Red Chicken and Kyoto Duck while incorporating seasonal spring ingredients. From appetizers through steamed dishes, grilled dishes, warm dishes, and the final course, each plate expresses the colors and aromas of spring. The mellow depth of Kyoto Red Chicken and the full-bodied flavor of Kyoto Duck, layered with the season's finest produce, create a refined yet multi-dimensional dining experience. The popular lunch course returns in a spring edition. Built around grilled Kyoto Red Chicken and an abundance of spring vegetables and wild mountain vegetables, this daytime kaiseki offers a light yet satisfying experience. The course includes appetizers using Kyoto Red Chicken and spring vegetables, deep-fried mountain vegetables, and small seasonal side dishes — a wide variety of flavors to enjoy in measured portions. The spring-like colors and fragrances make for a vibrant lunchtime setting, suitable for a meal during sightseeing or a relaxed dining gathering.
