The batter uses three types of cheese — ricotta, cream cheese, and mascarpone — and is carefully baked at low temperature for about six minutes, resulting in an impressive thickness of approximately 5cm. The hotel's original grain blend, "White Cereal," is added to give the batter a light, airy texture. Two distinct flavors are offered: the plain light batter and a version with a surface caramelized to a fragrant finish. On the side, matcha warabi mochi, shiratama (sweet rice balls), and oshiruko jelly with whole red beans add Japanese sweetness to the plate. The dish is finished with a drizzle of fragrant matcha sauce, achieving a refined balance of gentle sweetness and subtle bitterness.
