KURAMAE CANNELÉ, a freshly-baked canelé specialty shop in Tokyo's Kuramae district, is introducing a new product starting February 1st. The "Kuramae Canelé Yasashi-yaki" will be available exclusively at their Kuramae main location.
The new product uses the same dough as their regular Kuramae Canelé but features a modified baking method and replaces the beeswax coating with fermented butter, creating a distinctly different texture and flavor profile.
Softer Canelé with Rich Fermented Butter Aroma
The "Kuramae Canelé Yasashi-yaki" draws inspiration from the French tradition of "cuisson" in Bordeaux, where customers can choose their preferred level of browning. This version features a gentler baking approach.
While using the same dough as the standard Kuramae Canelé, the shop has replaced the typical beeswax coating with fermented butter and adjusted the baking temperature at one-degree increments, resulting in a completely different taste experience.
The generous amount of fermented butter creates a rich, mellow aroma with gentle sweetness as the star of this canelé. The focus is on the butter's fragrance that spreads immediately upon tasting and its pleasant mouthfeel.
The recommended way to enjoy the Yasashi-yaki is to warm it slightly, which enhances the fermented butter aroma even more. Visitors are encouraged to compare it with the regular "Kuramae Canelé" to experience the differences.
