From the streets of Fukuoka, embark on a taco journey through Kyushu's seven prefectures, one plate at a time. That's the summer dining experience "The CRAFT Bar and Grill" is offering this year.
The lineup carefully selects standout ingredients from each Kyushu prefecture — premium Miyazaki wagyu, morning-picked vegetables from Kurume, Fukuoka, branded chicken from Kumamoto, pork and citrus from Saga, kurobuta pork from Kagoshima, hamo (pike conger eel) from Oita, and yariika (spear squid) from Nagasaki — pairing each with a salsa or sauce that reflects the character and food culture of its region.
Because each ingredient's origin and personality differ, each taco reveals its own distinct flavor. Trying all seven side by side offers a real sense of Kyushu's breadth and richness.
The tortillas that form the base of each taco are "Dontilla," handmade in Tamba-Sasayama, Hyogo Prefecture, by a Mexican tortilla maker named Beto. Originally from Mexico City, Beto spent seven years learning to bake bread in Tokyo before relocating to Tamba-Sasayama, Hyogo, where he continues to make authentically flavored tortillas in Japan as a member of the local community revitalization corps.
Dontilla is made using heirloom corn (a native Mexican variety) grown in Tamba-Sasayama, following nixtamal, the traditional method of grinding whole kernels on a stone mill into masa dough rather than using cornflour. Because each tortilla is hand-griddled one at a time, they have a rich flavor and texture that mass-produced tortillas lack. Their wheat-free aroma and satisfying chew further bring out the flavor of the Kyushu ingredients.

KYUSHU CRAFT TACOS Menu
The fair offers seven original tacos, each built around a signature ingredient from one of Kyushu's seven prefectures — Miyazaki, Fukuoka, Kumamoto, Saga, Kagoshima, Oita, and Nagasaki. All seven are new to "The CRAFT Bar and Grill," making this summer-only lineup entirely exclusive. Tacos can be ordered starting from two pieces, and any combination of varieties is welcome.
Miyazaki Bistec Fiesta

This taco is generously topped with lean, high-grade Arita beef, served with a tropical salsa of crunchy green papaya and mango. Kurume Verde

Kumamoto Umaka Poyo
