Nikko Style Nagoya (Nagoya City, Aichi Prefecture; General Manager: Toshikazu Fuse) will hold the "Hamamatsu & Lake Hamana Farm-Direct Bounty Fair" (産直で楽しむ浜松・浜名湖の恵みフェア) at its restaurant "style kitchen" from Sunday, November 1, 2026 to Sunday, January 31, 2027. The fair is part of an effort to promote the food of the Hamamatsu and Lake Hamana area in Shizuoka Prefecture (Hamamatsu City and Kosai City), and is held in cooperation with the Hamamatsu-Hamanako Region Food x Agriculture Project Promotion Council (浜松・浜名湖地域 食×農プロジェクト推進協議会; secretariat: Agriculture and Fisheries Division, Industry Department, Hamamatsu City) and Japan Airlines (JAL).
The fair takes its cue from the partnership agreement that Hamamatsu City and JAL signed in 2018 to revitalize the Hamamatsu and Lake Hamana area, and serves as an opportunity to share the area's food. To develop the menu, the hotel's head chef, Shinya Tomizawa (富澤真也), took part in a business meeting with 34 local food suppliers. After checking quality control and supply methods, he selected the ingredients. The resulting course uses a total of 16 ingredients from the Hamamatsu and Lake Hamana area, across the appetizer, soup, fish, meat, and dessert.
During the fair, a gift campaign is also held for guests who order the lunch or dinner course. Through the fair, the hotel hopes to share the appeal of these ingredients and of the Hamamatsu and Lake Hamana area, about one hour from Nagoya by Shinkansen, and to help revitalize the region.

Hamamatsu Unagi-imo Potage with Hamamatsu Moringa Purée
A potage that brings out the flavor of "unagi-imo," a brand of sweet potato found only in Hamamatsu, accompanied by a refreshing moringa purée.
Lake Hamana Eel Shirayaki and Vegetable Bateau with Red Wine Sauce, Morishima Farm (森島農園) Salad and Mikkabi Green Mandarin Dressing
Plain-grilled Lake Hamana eel (shirayaki) and vegetables are arranged to look like a boat, served with a dressing made from Mikkabi green mandarin oranges.
Pan-Fried Enshu-nada Fresh Fish with Grilled Hamamatsu Eshalot (エシャレット) and Enami Farm (えなみ農園) Bergamot Sauce
Aromatically cooked white fish from Enshu-nada and the juicy, crisp texture of eshalot are served together with the fresh scent of bergamot.
Blessings of Kosai: Roast Kosai Pork and Lotus Root Hamamatsu Gyoza with Tomato and Basil Fines Herbes Sauce
Roast Kosai pork is paired with gyoza, a dish loved as a soul food of Hamamatsu. Finished Western-style with a tomato and basil sauce, the dish lets diners enjoy the savory flavor of the meat together with the texture of the gyoza.
Hamamatsu Star Ruby Grapefruit and Mandarin Orange, with Nagasaka Apiary (長坂養蜂場)'s "Nidaime no Hachimitsu" (Second-Generation Honey) and Rich Milk Shizuoka Montagna
A small mandarin orange is wrapped in ice cream made with Nagasaka Apiary's "Nidaime no Hachimitsu" (二代目の蜂蜜), then finished with raspberry sauce.
