Christmas Dinner "Joyeux Noël"

The Christmas dinner "Joyeux Noël" (ジョワイユ・ノエル) is a six-course meal designed to make guests look forward to the next plate from the moment they raise a glass of champagne.

Starter: Marriage of Italian burrata cheese and caviar

It begins with a plate of burrata cheese served with caviar.

Cold appetizer: Pressé of domestic black abalone and seafood,

The cold appetizer, "Pressé of Domestic Black Abalone and Seafood, Colors of the Holy Night," is a colorful pressé made with seafood such as domestic black abalone, scallops and salmon.

Warm appetizer: Foie gras mousse and pear gougère with winter truffle

Fish dish: Canadian lobster and red sea bream, gift-wrapped style, with bouillabaisse sauce

In the warm appetizer, "Foie Gras Mousse and Pear Gougère with Winter Truffle," rich foie gras made into a mousse is filled into a choux pastry and combined with pear and winter truffle for a deep flavor. The fish dish, "Canadian Lobster and Red Sea Bream, Gift-Wrapped Style," is appealing for the rich seafood aroma that spreads the moment the wrapping is opened.

The main dish is a choice of one of two meat dishes

Meat dish: Pie-wrapped ethically sourced venison from the foot of Mt. Fuji with porcini mushrooms and Kogyoku apple aroma

For the main dish, guests choose one of two meat dishes. One is the Akigawa beef (秋川牛) fillet from Takeuchi Farm (竹内牧場) in Akiruno, Tokyo, cooked at a low temperature until moist and served with a refreshing wasabi sauce. The other is a seasonal game dish made with minced, ethically sourced venison from the foot of Mt. Fuji, combined with porcini mushrooms and Kogyoku apples (紅玉) and baked in a pie crust. A red wine sauce with a gentle sweetness brings out the flavor of each ingredient.

The dessert is a rich chocolate mousse inspired by a Christmas wreath, combining the refreshing aroma of yuzu with the bright sweet-tart taste of strawberries.
