BROOKS GREENLIT CAFE, a plant-based café located in MIDORI.so 1F in Minami-Aoyama, Tokyo, is launching two limited-time fairs this summer.
Starting May 22, 2026 (Fri), the café will feature "Plant-Based Ice Cream COLLECTION" — a curated selection of 28 plant-based ice cream varieties from six brands across Japan. Then, from May 29, 2026 (Fri), a second fair begins: "Midsummer Fermented Drink Operation feat. _SHIP KOMBUCHA" — offering fermented soda and fermented soda floats made with _SHIP KOMBUCHA, a certified organic fermented sparkling tea.
Background: Sustainability and Wellness Through Plant-Based Choices
The café operates with the belief that sustainable everyday choices contribute to positive environmental impact. By presenting plant-based ice creams — made with ingredients that generally produce fewer greenhouse gas emissions compared to animal-based alternatives — alongside fermented drink options, the fairs aim to make eco-conscious, wellness-oriented choices enjoyable and approachable.

Beginning May 29, 2026 (Fri), the café will serve fermented soda and fermented soda floats made with _SHIP KOMBUCHA. This fermented sparkling tea is characterized by its organic-acid sourness, layered aroma, and lightly carbonated mouthfeel — a sophisticated summer refreshment that fits the spirit of the season.
All floats are topped with SOYSCREAM!!! "Creamy Vanilla," a plant-based vanilla ice cream made from soy milk pressed from zero-tillage soybeans, which blends naturally with the bright, tangy kombucha base.
