Saryo Hassui at Suiran Kyoto Serves Seasonal "Hassui's Roasted Sweet Potato Pudding" from October 24

Saryo Hassui (茶寮 八翠), the café at Suiran, a Luxury Collection Hotel, Kyoto in Arashiyama, will serve a seasonal sweet called "Hassui's Roasted Sweet Potato Pudding" from October 24 (Sat) to November 30 (Mon), 2026. The pudding is made with Beniharuka, a sweet potato variety associated with autumn.

The dessert is presented in an antique Imari bowl and builds on the rich sweetness and toasty aroma of slowly baked Beniharuka. It pairs the fluffy, rustic texture of roasted sweet potato with the smooth, silky mouthfeel of a pudding. Caramel made with aged soy sauce, seasonal fruit, and sweet red bean paste from a long-established Kyoto confectionery shop round out the plate, bringing Japanese and Western ingredients together in an autumn dessert.

The pudding base uses Beniharuka, known for its concentrated sweetness. The sweet potatoes are roasted slowly in a 180°C oven for about one hour to bring out their natural sweetness and toasty aroma. They are combined with free-range Kyojidama (京地玉) eggs from Kyoto, Hokkaido cream and milk, keeping the simple texture of roasted sweet potato while still giving the smoothness expected of a pudding.

The caramel that accents the dish is made with two-stage aged soy sauce. The bittersweetness of the caramel is joined by the rich aroma and subtle saltiness of the soy sauce, which brings out the natural sweetness of the Beniharuka. The pudding is decorated with fruit, including pear compote lightly scented with cardamom, fig, strawberry, and apple. It is also served with chunky sweet red bean paste (tsubuan) made with dainagon azuki beans from the long-established Kyoto Japanese confectionery shop Kameya Yoshinaga (亀屋良長), plus softly whipped crème Chantilly. The juicy fruit and the deep sweetness of the azuki beans balance each other. A scoop of brown sugar ice cream on the side adds a rich, aromatic note that suits the roasted sweet potato, and its chilled texture varies the flavor as you eat.

The antique Imari bowl used for the dish has aged gracefully over time. The character of this traditional vessel harmonizes with the modern sweet, which draws on both Japanese and Western ingredients, making it a dessert to enjoy with both the eyes and the palate.

Saryo Hassui stands on the banks of the Hozu River. Guests can enjoy this seasonal treat while looking out over Arashiyama colored by autumn leaves.
