A Contemporary Take on a Traditional Wagashi
The hotel's patissier has reimagined the classic daifuku by incorporating elements of Western confectionery, creating a multi-layered treat with a complex interplay of flavors and textures. The result is a dessert that goes beyond conventional wagashi.

Rich Uji Matcha Mousse — The centerpiece of the daifuku is a luxurious mousse made with fragrant, full-bodied Uji matcha. The moment it touches the palate, a refreshing bitterness and rich matcha aroma spread throughout.
Carefully Selected Ingredients — Inside the mousse is a filling of sweetened coarse-style sweet bean paste (tsubu-an) sourced from the Tokachi region of Hokkaido. Each piece is handcrafted by the patissier, wrapped in soft, pillowy gyuhi (a chewy sweet mochi-like rice cake) for a delicate, refined texture.
A Crunchy Feuilletine Base — The bottom of the daifuku features a layer of feuilletine — thin, crispy shards made from thinly baked crêpe batter. This provides a light, airy crunch that contrasts with the smooth mousse, adding an enjoyable textural accent through the very last bite.
