A Culinary Celebration of Japan's Finest Crabs
The event showcases the distinct flavors of three iconic Japanese crabs: snow crab (Zuwai), king crab (Taraba), and hairy crab (Ke). Each variety brings its own unique characteristics to the table, carefully prepared by the hotel's head chef to highlight their natural sweetness and rich umami.
The multi-course kaiseki menu presents these premium ingredients through various preparations, allowing guests to experience the full range of textures and flavors each crab variety offers.

Appetizer: Crab miso tofu with picked snow crab, ginger in delicious broth, spinach with sesame sauce, mackerel temari sushi, chrysanthemum pickles, grated daikon with sweet vinegar, duck roast with yuzu miso, sweet potato snow ball, herring kelp roll
Soup: Chicken tsumire, yuba (tofu skin), plum carrot, mitsuba (Japanese parsley), red sesame
Sashimi: Snow crab, bluefin tuna, yellowtail, northern clam, various garnishes
Grilled Dish: Grilled king crab, wagyu steak, three types of grilled vegetables, rock salt
Steamed Dish: Steamed hairy crab, lemon, crab vinegar
Meal: Nigiri sushi featuring snow crab, bluefin tuna, sea bream, pickled ginger
