A food event spanning the Yaesu, Nihonbashi and Kyobashi areas in front of Tokyo Station, YNK Seaweed Gourmet Walk (YNK Kaiso Gurume Sanpo), will run from Monday, November 9 to Friday, December 4, 2026. Organized by Tokyo Tatemono Co., Ltd. and Sea Vegetable LLC (合同会社シーベジタブル), the event aims to encourage people to explore the Yaesu, Nihonbashi and Kyobashi areas on foot and to create new liveliness in the neighborhood.
YNK (pronounced "ink") is an area name formed from the initials of Yaesu, Nihonbashi and Kyobashi. Several large-scale redevelopment projects are underway there, including TOFROM YAESU TOWER, which opened in September 2026. Step into the side streets, though, and long-established shops and distinctive local stores line the lanes, in a space that keeps the old-fashioned atmosphere of Edo's castle town.
A total of 17 restaurants take part, including restaurants inside TOFROM YAESU TOWER, 京都祇園 八坂圓堂 at Daimaru Tokyo store, and local restaurants such as long-established shops in the YNK area. While strolling through the old and new parts of the neighborhood, visitors can try limited-time original collaboration menus made with seaweed grown using proprietary cultivation techniques, an ingredient that has drawn growing attention in recent years for its health and beauty benefits. The seaweed used in each menu is produced by Sea Vegetable, which runs the shops シーベジスタンド and SEAVEGE- Kitchen Lab (シーベジ・キッチンラボ) in Yaesu.
A digital stamp rally exclusive to the event is also held. Those who meet the stamp rally conditions receive a special "seaweed novelty item" such as sujiaonori at シーベジスタンド on a first-come, first-served basis (limited to the first 4,000 participants).
Background of the Event
Seaweed has the potential to play a role in a wide range of cuisines, not only Japanese food but also Western, Chinese and confectionery, and in recent years chefs in Japan and abroad have taken note of it as an ingredient for creating new forms of expression. Besides its rich flavor and distinctive texture, it is rich in vitamins, minerals and dietary fiber, and it has drawn strong interest, especially overseas, as a "superfood" that supports health and beauty. However, as the marine environment changes with climate change, catches of natural seaweed in Japan are declining year by year. In addition, research into delicious ways to eat seaweed and recipe development have not been carried out sufficiently, and the frequency with which seaweed is eaten at today's dining tables is on a downward trend.
Tokyo Tatemono works on town development in the YNK area, where large numbers of people come and go. Sea Vegetable handles basic research, seedling production and land-based and sea-based cultivation of seaweed in locations across Japan, as well as recipe development. By working together, the two companies aim to give visitors a chance to learn about the environmental issues surrounding seaweed and its appeal through delicious meals, and to think about a "regenerative" future (the renewal and recovery of people, society, the economy and nature) while walking around the area.
Digital Stamp Rally to Earn a Seaweed Novelty Item
During the event period, a digital stamp rally lets visitors enjoy walking around the area while tasting the "collaboration menus" served at participating restaurants. Visitors order a target menu item and scan the QR code displayed at the restaurant to earn points easily. Those who meet the set conditions receive a special "seaweed novelty item" such as sujiaonori on a first-come, first-served basis (limited to the first 4,000 participants). The rally is a chance to visit a variety of restaurants in the YNK area and discover new food appeal and the liveliness of the neighborhood.
