DOLCE TACUBO, the patisserie born from Daikanyama's reservation-only Italian restaurant TACUBO, is opening its third location — DOLCE TACUBO GINZA — in Ginza on June 18, 2026. The new shop introduces eight rotating gelato flavors as its signature offering, alongside a rich selection of baked goods. Across all locations, the beloved soft serve is also being relaunched under the new name "Doltaku Soft."
About DOLCE TACUBO

DOLCE TACUBO launched in 2021 as a takeout-only shop, born from the many requests guests had to bring home the financiers and gelato served as dessert at the end of a TACUBO dinner course. In 2023, a second location — DOLCE TACUBO Caffe — opened at Toranomon Hills Station Tower, where its soft serve became a major hit. The Ginza shop marks the brand's third outpost.
Following the theme of "bringing the essence of the restaurant directly into the sweets," each item is crafted with the precision and philosophy of TACUBO, transforming familiar confections into something special. The focus is on drawing out the natural appeal of each ingredient through recipes and techniques tailored to each product.
New Menu Lineup
Ice Desserts

In addition to the classic baked goods, the Ginza shop places a strong emphasis on ice desserts, including gelato and soft serve. Gelato is also planned for EC sales in the future.
Gelato

Gelato is the signature menu item at the Ginza location. While the Daikanyama shop has long offered one rotating flavor at a time, the Ginza store will carry eight flavors simultaneously. Drawing on the creativity of a restaurant with seven consecutive Michelin recognitions, each gelato is built around thoughtful ingredient pairings. Fresh fruit gelato uses produce sourced directly from dedicated growers nationwide — the same growers the restaurant has worked with over the years.

Flavors:
- Pistachio — Two types of pistachio paste are used: fragrant roasted pistachio and fresh pistachio. Topped with roasted pistachio and Maldon salt.
- Plum — Fresh plum pureed with the skin on, letting the natural tartness of the fruit take center stage.
- Pineapple Basil — Fresh pineapple and basil, balancing pineapple's sweetness and acidity with a refreshing hint of basil for a summery flavor.
- Amarena — A vanilla base made with egg yolks, mixed with syrup-soaked cherries and cookies — a classic Italian combination.
- Yogurt Mango Passion — A yogurt base swirled with a mango and passion fruit sauce for a tropical finish.
- Marsala Raisin — Raisins soaked in Marsala wine folded into a milk gelato.
- Kawachi Bankan — Made with plenty of juice from Kawachi bankan citrus grown on Iwagi Island, with a refreshing tartness and subtle bitterness.
- Sage Stracciatella — A milk-based gelato infused with sage for a cooling freshness, with Minimal bitter chocolate pieces as an accent.
DOLCE TACUBO Soft Serve (Doltaku Soft)

Milk ¥1,000 / Matcha ¥1,200 / Mix ¥1,300
Made using a Carpigiani soft serve machine from Italy, this soft serve is known for its airy, silky texture and clean sweetness — a "new-sensation" take on a familiar treat. Considerable effort has gone into perfecting the texture through repeated recipe adjustments.
With the Ginza opening, the classic milk flavor is being relaunched. Switching to "Crème Sowanier," the highest-grade cream, results in a richer, more indulgent taste while preserving the clean, refreshing finish that owner Takubo — a self-described milk skeptic — insisted on. Matcha is also making its debut, carefully crafted to honor the flavor of the tea while remaining enjoyable to the very last bite.
New Baked Goods

To mark the Ginza opening, the financier and pudding lineup is expanding. Chocolate financier and hazelnut financier — previously seasonal items — are being added permanently, bringing the regular financier selection to three. A new "white pudding" is also joining the menu, and the two pudding varieties will be available as a set. Baumkuchen and other items are in development.
- Chocolate Financier (¥600) — Made with Minimal chocolate, delivering a rich cacao aroma and pleasant bitterness. Honey is used to achieve a moist, dense texture.
- Hazelnut Financier (¥600) — Generously made with hazelnut powder and paste, allowing the full flavor of hazelnut to shine. Topped with roasted hazelnuts.
White Pudding:

Made with Crème Sowanier, this pudding sits between a jelly and a classic pudding in texture — smooth and silky, with a milky body and a clean finish. Fresh passion fruit from Okinawa adds a vibrant tartness and aroma. The accompanying fruit will change with the seasons.
