From May 1 to 10, 2026, the Fiorentina Pastry Boutique at Grand Hyatt Tokyo in Roppongi Hills will have a limited-edition Mother's Day Sweets Collection available, featuring four elegant creations — three of which are brand new for 2026. The boutique will operate from 10:00 AM to 8:00 PM during the sale period.

Flower Bouquet Mango Mousse Cake (New)
One of the three new additions is the Flower Bouquet Mango Mousse Cake — a spherical creation designed to resemble a flower bouquet. A chocolate dome adorned with gerbera motifs sits on top of the cake. When gently lifted, a rose made from thinly layered fresh mango slices is revealed inside. Beneath the dome, the cake consists of mango mousse layered with coconut gelée and almond sponge. Fine meringue is folded into the mousse for a light, airy texture, and the exterior is coated with almond-infused white chocolate for added crunch. Both whole and individual piece sizes are available.


Apricot Tea Savarin — approx. 12 cm / ¥4,000 (New)

The Apricot Tea Savarin is a classic French pastry — brioche soaked in a liqueur-infused syrup — adorned with delicate flower chocolate decorations for Mother's Day. The recipe for the special tea syrup, made with Earl Grey as a base and combined with cinnamon, orange peel, and rum, earned first place at the Utsumi-kai Flavor Competition, a domestic confectionery competition for young pastry chefs. The dough surface is coated with apricot jam, and the top is layered with orange and apricot gelée and smooth tea cream, with fruit flesh embedded in the gelée for added depth. White chocolate cream infused with cinnamon and star anise is piped on as the finishing touch.
Mother's Day Piccolo Gatto — ¥2,800 (New)

The Piccolo Gatto is an assortment of bite-sized petits fours. For Mother's Day 2026, a new set joins the lineup with a flower and heart motif theme. The set contains five varieties:
- Cuore – A heart-shaped sweet (cuore means "heart" in Italian) with a "Mother's Day" message, featuring raspberry mousse topped with a financier.
- Gerbera – A visually striking strawberry mousse shaped like a gerbera flower, symbolizing gratitude.
- Mango Flower Basket – A basket-shaped waffle topped with custard and fresh mango arranged in a rose design.
- Strawberry Christian – Layers of strawberry, fresh cream, and thin white chocolate, topped with freeze-dried rose petals for a crisp texture.
- Rose White – A mousse combining rose-raspberry gelée with rich, smooth white chocolate.

Returning by popular demand is the Grand Premium Flower Cake, part of the Grand Premium Shortcake series that uses higher-quality ingredients than the standard lineup. A sponge layered with Jersey milk fresh cream and crème brûlée made with Tahitian vanilla beans is paired with strawberry mascarpone mousse, then finished with strawberry chocolate cream piped in flower shapes and feather-thin chocolate decorations. Both whole and piece sizes are available.
