A new shaved ice creation is coming to the Cocktail & Tea Lounge on the third floor of Keio Plaza Hotel in Shinjuku. The "Pina Colada Shaved Ice" will be on offer from June 1 (Monday) to August 31 (Monday), 2026, limited to just 20 servings per day.

The dessert was developed by bartenders at the lounge under the theme of "shaved ice crafted by a bartender," after extensive trials and refinements. It draws inspiration from the hotel's own original pina colada recipe — a version that goes beyond the classic rum, pineapple juice, and coconut milk combination by adding orange juice and mango syrup for a fruitier, more mellow sweetness. The shaved ice brings that same tropical blend to life in dessert form, layering pineapple, coconut, mango, and orange flavors in every bite.

A Generous Topping of Summer Fruits

The fluffy shaved ice is topped with fresh pineapple and mango, plus crunchy coconut chips. Pineapple leaves and orchid flowers are added as decoration, giving the bowl a vibrant, summery look.

Bartenders Express the Original Pina Colada in Shaved Ice Form

The shaved ice starts with a coconut milk ice base, layered with mango syrup, a tropical mango and pineapple espuma, and coconut-flavored whipped cream. A separately served blood orange syrup is finished by a bartender using a shaker — a detail that keeps the "shaved ice from a bartender" concept front and center.

A Calculated Balance of Flavors

As a flavor accent, pineapple simmered in a house-made ginger syrup — infused with spices including cloves, cardamom, and cinnamon — is added as a topping. The blood orange syrup served on the side brings a refreshing citrus aroma that ties the whole flavor profile together.

Pure Ice Favored by Bartenders

The shaved ice uses "kakugori" block ice produced by Shinjuku Kori Kogyo Co., Ltd., a supplier well known among bartenders. This pure ice is made from carefully filtered water and crafted over 48 hours, resulting in a product with virtually no impurities. It melts slowly, dissolving gently on the palate, and pairs beautifully with syrups and toppings.

Based on the hotel's original pina colada recipe, we created a tropical shaved ice perfectly suited for the hot summer. The bartenders from the Cocktail & Tea Lounge worked together to achieve the ideal balance of acidity, sweetness, and richness. From the pineapple simmered in house-made ginger syrup to the blood orange syrup finished with a shaker, this is a shaved ice experience you can only find at Keio Plaza Hotel.
