Yumura Onsen is located in Shinonsen Town, Tajima District, in northern Hyogo Prefecture, nestled among mountains and known for its scenic natural surroundings. Facing the Sea of Japan, the area is rich in seasonal seafood, freshly harvested vegetables, and rice grown in the fertile soil of the San'in region.

White Squid (白イカ) Sashimi

Among all varieties of squid, the 剣先イカ (kensaki ika) is considered the highest grade. In the San'in region, it is commonly called "白イカ" (white squid). Its snow-white flesh has a firm, pleasant texture, and is served as 姿造り (sugata-zukuri) — presented whole — allowing guests to appreciate both its flavor and its beautiful form.

但馬牛 (Tajima beef) is a brand wagyu raised in Hyogo Prefecture's Tajima region. Breeders have maintained its bloodline for generations without crossbreeding with cattle from other prefectures. The beef is characterized by minimal subcutaneous fat and high-quality muscle fiber, offering a balance of umami from both the lean meat and the fat. It is served as sukiyaki.
