Where Japanese Fermentation Culture Meets Kyoto Aesthetics
This afternoon tea reinterprets traditional Japanese fermented foods—miso, sake lees, salted koji, and amazake—through a contemporary lens. The menu showcases the deep umami flavors and aromas that fermentation creates, paired with seasonal Kyoto ingredients.
Spring Menu (March to May): 13 Savories and 3 Traditional Wagashi
Savory selections highlight the rich flavors of fermentation:
• Sake lees cream cheese and tomato caprese with housemade fermented lemon
• Inca no Mezame potatoes complemented by the richness of black miso
• Kyoto duck breast marinated in salted koji to maximize umami
• Scallop shirazu with fermented mandarin jelly
• Thick-rolled omelet featuring the gentle sweetness of amazake
Each dish thoughtfully combines ingredients with fermentation techniques to create innovative flavors.
Three traditional wagashi are crafted in collaboration with Kyoto's historic confectionery shop Kameya Yoshinaga:
• A limited edition of their signature "Ubatama" finished with sake lees
• Transparent kingyokugan (crystal jelly) made with amazake, available in plain and strawberry varieties
• An no Hako cream cheese, presenting a new dimension of fermentation
The wagashi are designed with delicate artistry that evokes the spring season.
